Autumn is just around the corner and with it, the countless pumpkin recipes - finally! Because what could be better than warming up with a classic pumpkin soup on cold autumn days?


What You'll Need

800 g Hokkaido pumpkin, cleaned
600 g carrots, peeled
3 small onions
5 cm ginger
4 tablespoons olive oil
1L vegetable broth
500 ml of coconut milk
1 lemon, the juice of it
4 tablespoons soy sauce
4 pinches pumpkin spice


How it's Done:

In the first step, you peel the pumpkin, the carrots, the ginger, and the onions, and cut them into cubes. Then, spread the diced vegetables on a baking sheet, lining them in baking paper. Drizzle them with a little olive oil and pumpkin spice. Cook for about 20 minutes in a 180-degree oven. Let the enhance so that the soup gets more flavor in the end!

Meanwhile, heat the remaining ingredients (vegetable stock, coconut milk, lemon juice, soy sauce) in a saucepan. Remove the pumpkin mix from the oven and add it to the pot. Bring to a boil and puree as finely as possible. You can add more flavor by seasoning again with pumpkin seasoning, salt & pepper, and lemon juice.
