What You'll Need
1 can kidney beans
1 can corn
4 spring onions
1 red onion
10 cherry tomatoes
1 big avocado
2 - 3 tbsp freshly squeezed lime juice
1 red chili pepper
3 tbsp olive oil
1 tsp maple syrup
1 bunch of coriander
2-3 pinches of JS Sporty Spice Seasoning
What to Do
- First, drain and rinse the beans and corn with a sieve. Then, clean the spring onions and cut them into fine rings. Finally, wash and quarter the cherry tomatoes.
- Next, peel the avocado and dice it gently. Clean the chili, remove the seeds and chop it finely. Attention: always use kitchen gloves, they will help keep chili burns at bay.
- For the dressing: mix the olive oil with the lime juice, the maple syrup, and the JS Sporty Spice Seasoning.
- Pour the dressing over your veggies and add the avocado. Finally, wash the coriander and pluck off some leaves into the salad for extra detail!
