Lemon Coconut Berry Oatmeal

We are suckers when it comes to presentation, foodwise at least. So it's no surprise that this oatmeal holds a special place in our hearts. I mean would you look at the colors? We don't know if we should eat it or admire it! We'll eat it... most definitely. 

Preparation time: 10 min

Servings: 5

What You'll Need

5 tbsp rolled oats
200 ml coconut milk
1 tsp coconut oil
1 handful of blueberries
1 handful of raspberries
1 handful of coconut chips
1 tbsp maple syrup
1 tbsp amaranth pop
1 tsp lemon juice
2 pinches of JS Blossom Mix


    How to Do It

    1. In a pot, add the coconut milk, the rolled oats and maple syrup. Bring to a boil! Once boiling, reduce the heat and slowly simmer until fully cooked. 
    2. Pour the oatmeal in a serving bowl add drizzle the coconut oil on top. Fun fact: coconut oil is anti-bacterial.
    3. Now for the toppings! Add the berries, the shredded coconut, amaranth, a few drops of lemon juice and JS Blossom Mix!

    So now you know. Delicious, filling, vegan, and gluten-free. A mix of coconut and lemon, a yummy breakfast for the summer.
