Spice up your Avocado Bagel!
2 plain bagel
½ cup loosely packed fresh spinach leaves
1 red onion
1 Tbsp. softened cream cheese
1 tsp. Avocado Topping
Slice the bagel and toast until crispy. Meanwhile, cut the avocado in half, then pit, peel and slice it thinly.
Wash the spinach and spin it until dry. Peel, halve and finely chop the onion.
Spread bottom halves of the bagels with cream cheese, then top with the spinach, onions, avocado slices and Avocado Topping.
Cover with top halves of bagels.
Tip: For an extra kick, soak the chopped onion in 1/4 cup white vinegar mixed with 1/4 cup water and 1/4 cup sugar for 30 minutes. Drain the onions, then use them to make the bagel sandwiches as directed.
