Avocado Halloumi Sandwich

Spice up your Avocado Halloumi Sandwich!
Ingredients
1 fully ripe avocado, mashed
Juice from 1 lime half
1 Tbsp. olive oil
5 oz. halloumi cheese, cut into ½-inch-thick slices
2 slices of whole wheat bread, toasted

¼ tsp. Avocado Topping
Directions
Mix avocado and lime juice until well blended.
Heat the oil in a medium skillet over medium heat. Add the cheese slices, then cook 2-3 min. on each side or until both sides of cheese slices are crisp and golden brown.
Spread the toast slices with the mashed avocado, then top with the cheese.
Sprinkle with the Avocado Topping.
Tips: You can pimp up the recipe according to your preferences by adding tomato slices, arugula or poached eggs to the sandwiches. Garnish with sprigs of your favorite fresh herb, such as cilantro or parsley.
