
Avocado Hummus

Spice up your Avocado Hummus!
Ingredients
2 fully ripe avocados
1 can (16 oz.) garbanzo beans (chickpeas), rinsed
½ bunch of fresh parsley
3 Tbsp. tahini
2 cloves garlic, minced
¼ cup fresh lemon juice
2 Tbsp. olive oil
½ tsp. ground cumin
¼ tsp. salt

2 tsp. Avocado Topping
Directions
Cut the avocados in half. Remove the pits, then scoop the flesh into a food processor or blender container.
Add the garbanzo beans, parsley, tahini, garlic, lemon juice, olive oil, cumin and salt; process until well blended, stopping occasionally to scrape down the side of the food processor.
Spoon the hummus into a serving bowl.
Top with the Avocado Topping.
Tip: Serve this easy-to-make hummus with your favorite fresh vegetable dippers, pita bread or tortilla chips.
