Whether hot or cold, savory or sweet, in grilled or stuffed form, as a spread or popular guacamole dip - its nutty flavor and creamy consistency make the avocado a popular fruit in modern cuisine. Avocados not only impress with their high content of valuable unsaturated fatty acids, but also score with versatility. With our morning baked avocado egg recipe, you can enjoy the healthy superfruit baked with two eggs, warm from the oven. Since we love avocados and we love eggs, why not just combine them? In addition, you can also add other toppings, such as Parmesan, feta or onions as desired.
Ingredients
1 avocado
2 Tbsp. olive oil
2 slices of ham
2 eggs

1 tsp. Avocado Topping
Directions
Heat the oven to 390°F.
Cut the avocado lengthwise in half, then twist the halves to separate them. Remove and discard the avocado pit. Brush the cut sides of the avocado halves with the olive oil, then place the avocado halves, cut sides up, on a parchment-covered baking sheet.
Press 1 ham slice onto the bottom and up side of hollow in each avocado half. Carefully slip 1 cracked egg into each ham shell.
Bake the avocado in the oven for 20 minutes or until heated through.
Sprinkle with the Avocado Topping.
Serving Suggestion: Serve with your favorite warm bread.
Cooking Tip: For best results, make sure that the avocado you use to prepare this recipe is ripe. A ripe avocado can be recognized very well by the following characteristics: The fruit yields to pressure, the inner pit moves when shaken and the stalk can be easily removed. To really enjoy the creamy consistency and fine flavor of the avocado, you should always process the fruit when it is fully ripe.

It’s quickly prepared and you can drink your coffee while the oven does the work. By the way, you can also prepare the baked avocado eggs in the air fryer. Heat the air fryer to 400°F and set a timer for 8 to 10 minutes. But be careful and check the eggs frequently to prevent a hot mess.
