Butter Chicken

Spice up your Butter Chicken!
Ingredients
1-½ lb. boneless skinless chicken breasts
¼ cup plain low-fat yogurt
Juice from ½ of a lemon
1-½ tsp. salt

1 Tbsp. Indian Allrounder
3 Tbsp. sunflower oil
½ cup butter, divided
2 onions, finely chopped
½ red chili pepper, cut into thin slices
1 Tbsp. tomato paste
2 garlic cloves, minced
1-½ Tbsp. white wine vinegar
1 lb. tomatoes, chopped
2 Tbsp. sugar
⅓ cup half & half cream
1 tsp. salt

Directions
Place the chicken in a medium bowl. Mix the yogurt, lemon juice, salt and Indian Allrounder until well blended. Add to the chicken and mix lightly. Refrigerate for 1 hour.
Heat the oil and 4 Tbsp. of the butter in large skillet over medium heat. Add the onions and chili peppers and cook and stir for 3 minutes or until the onions are crisp-tender.
Add the tomato paste, garlic and Indian Allrounder; cook and stir for 3 minutes. Add the vinegar; cook for 2 minutes, stirring constantly to scrape browned bits off bottom of skillet. Add the tomatoes, sugar and salt and cook and stir for 5 minutes.
Pour the sauce into a blender and blend until smooth. Pour through a fine-mesh strainer; discard strained solids.
Melt remaining butter in same skillet. Add the chicken; cook for 5 minutes on each side or until done (165°F). Stir in the sauce and cream; simmer over medium-low heat for 10 minutes, stirring frequently. Stir in the salt and Indian Allrounder.
Tip: For more flavor, you can instead marinate the chicken overnight. Serve with rice or naan bread.
