Spice up your Chicken Fajita!
1-½ lb. boneless skinless chicken breasts, cut crosswise into strips
1 red pepper, cut into thin strips
1 green pepper, cut into thin strips
1 yellow onion, cut into thin slices
¼ cup olive oil
¼ cup Fajita Sauce
6 flour tortillas (8 or 10 inch)
¼ cup sour cream
3 green onions, sliced
1 tsp. salt
1 tsp. Guacamole (Seasoning Blend)
2 avocados, finely chopped
1 tomato, chopped
1 bunch of fresh cilantro, finely chopped
1 red chili, seeded, finely chopped
3 Tbsp. olive oil
Juice from 1 lime
1 Tbsp. Guacamole (Seasoning Blend)

Place the chicken in a medium shallow baking dish. Add the peppers, yellow onions, oil and Fajita Sauce; stir to combine. Season with the salt and Guacamole (Seasoning Blend).
Refrigerate 1 hour to marinate.
Heat the oven to 400°F.
Bake the chicken and vegetables for 20 minutes or until the chicken is done, adding the tortillas to the oven for the last 2 minutes of the baking time.
Prepare the Guacamole by combining the avocados, tomatoes, cilantro, chilis, oil and lime juice in a medium bowl. Stir in the Guacamole (Seasoning Blend). Refrigerate until ready to use.
Spoon the chicken and vegetables onto the tortillas and roll up.
Serve topped with the prepared guacamole, sour cream and green onions.
