Ingredients
1-1/2 lb. ground beef, divided
1 Tbsp. rapeseed oil, divided
1 tsp. salt
1 onion, finely chopped
1 red pepper, chopped
1 garlic clove, minced
1 Tbsp. tomato paste
2 cans (14-½ oz. each) diced tomatoes, undrained
½ cup beef stock
1 can (15.5 oz.) kidney beans, rinsed
1 can (15.25 oz.) sweet corn, drained
1 oz. semi-sweet baking chocolate, finely chopped
1 Tbsp. ground coffee
¼ cup sour cream
1 small bunch of fresh cilantro, finely chopped

Directions
Brown half of the meat in a large saucepan, then spoon it into a medium bowl and set it aside. Repeat with the remaining meat. Season all the browned meat with the salt.
Heat the oil in the same saucepan over medium heat. Add the onions, red peppers and garlic; cook and stir for 5 minutes.
Return the meat to the saucepan. Stir in the tomato paste and Chili Con Carne Seasoning Blend.
Add the tomatoes and the beef stock, stir. Bring the chili to a boil, then simmer it over medium-low heat for 25 minutes, stirring it occasionally.
Add the beans, corn, chocolate and coffee; cook and stir until the chocolate is completely melted and the chili is heated through.
Serve the chili topped with the sour cream and cilantro.
Tip: Serve the chili over hot cooked rice.
