Spice up your vegetables!
Ingredients
3 carrots
1 eggplant
1 zucchini
1 yellow pepper
1 red pepper
1 red onion
3 garlic cloves
3 Tbsp. olive oil
1 Tbsp. tomato paste
1 can (15 oz.) tomato sauce
4 pinches of salt
1 pinch of pepper

1 tsp. Vegetable Allrounder
10 slices bread
3 Tbsp. olive oil

Directions
Peel and finely chop the carrots. Finely chop the eggplant, zucchini, yellow peppers, red peppers, onions and garlic.
Heat the olive oil in a large skillet over high heat. Add the chopped vegetables; cook and stir 5 min. Stir in the tomato paste, then cook for another 30 sec.
Add the tomato sauce; stir. Bring to a boil. Season with salt, pepper and Vegetable Allrounder; stir. Simmer 15 min.
Remove and discard the crusts from the bread slices. Cut the bread into small pieces.
Heat the olive oil in a large skillet over medium heat. Add the bread; cook and stir 5 min. or until crispy.
Top the vegetables with the croutons. Serve immediately.
