Spice up your Fried Egg Sandwich!
Ingredients
2 English muffins
6 slices bacon
2 eggs

1 tsp. Egg Topping
1 fully ripe avocado
2 Tbsp. oil
1 Tbsp. lemon juice
½ tsp. salt

Directions
Split, then toast the English muffins.
Fry the bacon in a large skillet over medium heat for 4 min. or until crispy. Remove the bacon from the skillet and set aside.
In the same skillet, cook the eggs over medium heat for around 1 min. Cover the skillet with a lid, cook eggs over lower heat for 5 min. or until the egg whites are firm and yolks are cooked to desired doneness.
In the meantime, scoop out the avocado flesh into a medium bowl. Add the oil and lemon juice, mix until blended with a fork. Season with the salt.
Spread two muffin halves with the Avocado Cream. Top with bacon, fried eggs and Egg Topping. Cover with remaining muffin halves. the base of the English muffins with avocado cream. Layer with bacon and fried eggs and garnish with Egg Topping before finishing with the other muffin half.
