German Potato Salad

Spice up your German Potato Salad!
Ingredients
4.5 lb. potatoes, peeled, sliced
1 onion, finely chopped
2 Tbsp. white wine vinegar
1 cup vegetable stock or broth
2 Tbsp. canola oil
2 tsp. yellow mustard

1 Tbsp. Potato Allrounder
Directions
Place the potatoes in a large saucepan. Add enough cold water to cover the potatoes; season with salt. Bring to a boil over high heat. Reduce the heat to medium-low, then simmer the potatoes for 15 to 20 minutes or just until the potatoes are tender.
Meanwhile, prepare the dressing by whisking together the remaining ingredients in a medium bowl until well blended. Set aside.
Drain the cooked potatoes; cool slightly.
Transfer the potatoes to a large bowl. Add the prepared dressing; mix lightly.
Let the potato salad stand at room temperature 30 minutes before serving.
