Spice up your Harissa Chicken!
Ingredients
Juice from 1 lemon
2 Tbsp. extra-virgin olive oil
2 lb. boneless skinless chicken thighs
2 Tbsp. coarsely chopped fresh cilantro
1 lemon, cut into 6 wedges
-
6 tsp. Harissa
Directions
Mix the lemon juice, olive oil and Harissa until well blended.
Pour ½ cup of the lemon juice mixture into a small bowl and reserve for later use.
Place the chicken in a shallow glass dish. Pour the remaining lemon juice mixture over the chicken; toss to evenly coat the chicken with the lemon juice mixture.
Refrigerate at least 30 minutes.
Heat the grill to medium-high heat. Lightly brush the grill grate with additional oil.
Transfer the chicken to the grill grate; discard the lemon juice mixture remaining in the baking dish.
Grill the chicken for 4 to 5 minutes on each side or until it’s done (165℉), brushing occasionally with the reserved lemon juice mixture. (Or, you can instead bake the marinated chicken on a parchment-covered rimmed baking sheet in a 400℉ oven 20 to 25 minutes or until chicken is done, brushing occasionally with the reserved lemon juice mixture.)
Place the chicken on a serving plate; sprinkle with the cilantro.
Serve with the lemon wedges on the side.
