Spice up your Lasagna Soup!
Ingredients
12 lasagna noodles
1 lb. ground beef
1 Tbsp. olive oil
2 carrots, chopped
1 onion, finely chopped
1 celery stalk celery, chopped
4 garlic cloves, minced
2 Tbsp. tomato paste
2 cans (14.5 oz. each) diced tomatoes, undrained
1 qt. (4 cups) vegetable broth
1 cup sour cream
1 cup grated Parmesan cheese
Salt to taste

Directions
Cook the lasagna noodles in a large saucepan of lightly salted boiling water as directed on the package. Drain the noodles, then immediately rinse them with cold water. Cut the noodles into 1-inch-thick slices, then set them aside.
Heat the oil in a large saucepan over medium-high heat. Add the ground beef; cook until evenly browned, stirring frequently. Add the vegetables and garlic; cook and stir over medium heat for 2 minutes. Stir in the tomato paste.
Add the tomatoes, vegetable broth and the Pasta Allrounder; stir, then simmer over medium-low heat for 20 minutes, stirring occasionally.
Add the lasagna noodles to the soup, then season it with the salt; stir. Remove the soup from the heat.
Mix the sour cream and Parmesan cheese until blended.
Serve the soup topped with the sour cream mixture.
