Spice up your Potato Leek Soup!
Ingredients
¼ cup butter
1 onion, cut into small cubes
3 leeks, cut into thick slices
½ lb. baking potatoes, peeled, cut into 1-inch cubes
3-¾ cups vegetable stock
¾ cup heavy whipping cream

2 Tbsp. Potato Allrounder
Directions
Melt the butter in a Dutch oven or small stockpot over medium heat. Add the onions and cook for 3 minutes, stirring frequently. Add the leeks, potatoes and the Potato Allrounder.
Stir in the vegetable stock and cook over medium-low heat for 15 minutes or until the vegetables are tender, stirring occasionally. Remove the pan from the heat.
Add the whipping cream. Use a hand blender to blend the soup until smooth.
Tip: Season with salt before serving, if desired.
