Spice up your Smashed Potatoes with Pesto!
Ingredients
2 lb. potatoes (medium size)
2 Tbsp. olive oil
1/4 cup grated Parmesan cheese
1/4 cup green pesto

1 ½ tsp. Fries Allrounder
Directions
Cook the potatoes in a large saucepan of boiling salted water for 20 minutes or just until the potatoes are tender.
Preheat the oven to 400°F.
Place the potatoes in a single layer on a parchment-covered baking sheet. Mash the potatoes with the bottom of a clean drinking glass.
Brush tops of potatoes with the oil, then sprinkle them with the Fries Allrounder and the Parmesan cheese.
Bake the potatoes for 25 to 30 minutes or until the potatoes are crisp.
Drizzle the baked smashed potatoes with the green pesto and serve.
