Spice up your Vegetable Fried Rice!
Ingredients
1 cup long-grain white rice
3 Tbsp. sunflower oil
1 red pepper, cut into thin strips
3 carrots, finely shredded
1 yellow onion, finely chopped
8 oz. sugar snap peas, cut lengthwise in half
3 green onions, cut into 1-inch lengths

1 tsp. Rice Allrounder
Directions
Cook the rice according to the package directions.
Heat the oil in a large skillet over medium heat. Add the red peppers; cook and stir for 3 minutes. Add the carrots and yellow onions and cook for 2 minutes, stirring constantly.
Add the rice; cook and stir over high heat for 3 minutes.
Add the remaining ingredients; cook for 3 minutes and stir constantly.
Tip: For added color and flavor, prepare the recipe as directed. Stir 2 beaten eggs; cook and stir for 2 minutes or until eggs are set, stirring constantly.
