Zucchini & Beef Stir-Fry
Spice up your Zucchini & Beef Stir-Fry!
1/4 cup olive oil, divided
2 zucchini, finely chopped
1 yellow pepper, finely chopped
1 red pepper, finely chopped
2 onions, thinly sliced
1 lb. ground beef
1 can (15 oz.) crushed tomatoes, undrained
7 oz. feta cheese
1 tsp. Beef Allrounder
Heat 2 Tbsp. oil in a large nonstick skillet over medium heat. Add the vegetables; cook 4 to 5 min. or until crisp-tender, stirring frequently. Spoon the vegetables into a bowl; cover to keep it warm.
Add the remaining 2 Tbsp. oil to the skillet along with the ground beef; cook until evenly browned, stirring occasionally. Season with the Beef Allrounder.
Return the cooked vegetables to the skillet along with the tomatoes; stir. Cook for 5 min. or until heated through, stirring occasionally. Remove from the heat.
Crumble the cheese over the stir-fry.
Tip: Serve with hot cooked basmati rice.
