Ingredients

  • 1 tsp
    Potato Allrounder

  • 1 clove
    garlic
  • 14 oz
    Gruyère cheese, coarsely grated
  • 14 oz
    Emmental cheese, coarsely grated
  • 1 tbsp
    cornstarch
  • 10 oz
    dry white wine
  • 1 tbsp
    lemon juice
  • 2 tbsp
    kirsch or brandy (optional)
  • Optional:

  • cubed baguette or your favorite bread
  • boiled potatoes
  • gherkins, cherry tomatoes
  • blanched vegetables such as broccoli, bell peppers, or carrots

Directions

Peel the garlic clove and cut it in half. Rub the inside of a fondue pot thoroughly with the garlic halves to infuse the flavor.

In a large bowl, combine the grated Gruyère and Emmental cheeses. Add the cornstarch and mix until the cheese is evenly coated.

Pour the white wine and lemon juice into the fondue pot. Place it over medium heat and bring to a gentle simmer.

Gradually add the cheese mixture to the pot, stirring constantly. Ensure each portion is fully melted before adding more to create a smooth consistency.

Once the cheese is melted and creamy, stir in the kirsch or brandy if using. Season with the Potato Allrounder and stir until fully combined.

Place the fondue pot over a fondue warmer to maintain a low heat, keeping the cheese warm and liquid.
