A simple pumpkin gratin, seasoned with our delicious Potato Allrounder, makes the perfect autumn side dish.



Ingredients

    potatoes
  • 1 lbs
    Hokkaido pumpkin (1 small)
  • 1
    onion
  • 2 cloves
    garlic
  • 2 tbsp
    olive oil
  • 1 cup
    heavy cream
  • 1 cup
    milk
  • 1 tsp
    dried thyme
  • 5 oz
    grated cheese (e.g., Gruyère, Gouda, or Emmental)
  • salt, pepper
  • parsley and fresh thyme

Directions

Preheat the oven to 350°F (top/bottom heat).

Peel the potatoes and cut into thin slices. Scrub the pumpkin, remove the stem, and cut in half. Remove the seeds and cut into slices a little thicker than the potatoes. (You likely won’t need the entire pumpkin.) Peel and finely dice the onion. Peel and finely chop the garlic.

Heat the olive oil in a pan and sauté the onion and garlic over medium heat until translucent.

In a bowl, mix the heavy cream and milk with the Potato Allrounder Seasoning Blend and dried thyme. Season with salt and pepper.

Grease a large casserole dish with a little olive oil. Alternate layers of potato and pumpkin slices, adding some sautéed onion and garlic to each layer. Finish with a layer of pumpkin.

Pour the cream and milk mixture evenly over the potato and pumpkin layers. Sprinkle the grated cheese evenly over the top.

Bake the casserole in the preheated oven for 50–60 minutes, until the potatoes and pumpkin are soft and the cheese is golden brown.

Remove the pumpkin gratin from the oven and let it cool for 5 minutes before serving.
