    JS Caprese Topping
  • 1
    red pepper with stem
  • 2 pkg
    (8 oz each) cream cheese, softened
  • 1 ½ cups
    shredded sharp cheddar cheese
  • 3
    green onions, sliced
  • 2 cups
    crushed tortilla chips

Directions

Cut the stem off the top of the red pepper and reserve for later.

Finely dice the red pepper and place it in a medium bowl. Add the cream cheese, Caprese Topping, cheddar cheese, and onions, and mix well.

Place 2 large pieces of plastic wrap on your work surface. Spoon the cream cheese mixture onto the center of the plastic wrap. Shape the cream cheese mixture into a ball, using the ends of the plastic wrap to help. Pat down into a pumpkin-shaped ball.

Stretch 4 large rubber bands around the wrapped cheese ball to make 8 indentations, resembling a pumpkin.

Refrigerate the cheese ball for at least 2 hours or up to 24 hours. (The longer you refrigerate the cheese ball, the better the flavor and deeper the indentations are in the cheese ball.)

Remove the rubber bands and the plastic wrap carefully from your cheese ball.

Roll the cheese ball in the crushed tortilla chips or use your hands to pat the crumbs on. Gently press the red pepper stem into the top of the cheese ball for the pumpkin’s stem.
Tip: You can double up on rubber bands to make the indentations deeper. Serve the cheese ball with your favorite crackers or tortilla chips.
