Spice up your creamy Avocado Spaghetti!
Ingredients
1 pkg. (1 lb.) spaghetti
2 ripe avocados
2 garlic cloves
Juice from half of a lemon
2 Tbsp. olive oil
¼ cup milk or dairy free milk (optional)
1 cup cherry tomatoes

2 tsp. Avocado Topping
Directions
Cook the spaghetti in a large saucepan of salted water until al dente.
Meantime, cut the avocados lengthwise in half. Twist the avocados to separate the halves. Remove and discard the avocado pits. Use a spoon scoop out the avocado flesh into a high-sided medium bowl.
Add the garlic, lemon juice and olive oil to the avocados; beat with a hand mixer until mixture forms a smooth paste. If necessary, gradually beat in enough of the milk until sauce is of desired consistency.
Cut the tomatoes in half.
Drain the spaghetti, then place in a large bowl. Add the avocado sauce and tomatoes and mix lightly.
Top with the Avocado Topping.
