Lentil Curry

Spice up your Lentil Curry!
Ingredients
2 Tbsp. sunflower oil
1 red onion, finely chopped
3 garlic cloves, minced
2 Tbsp. tomato paste
1-½ tsp. red curry paste
1 can (13.5 oz.) unsweetened coconut milk
1 cup water
¾ cup red lentils
½ tsp. salt
1 pinch of pepper

1-½ tsp. Garam Masala
1 cucumber, thinly sliced
1 cup plain yogurt
½ bunch of fresh parsley, finely chopped
¼ tsp. salt

Directions
Heat the oil in a large saucepan over medium heat. Add the onions and garlic; cook and stir for 4 minutes.
Add the tomato paste, curry paste and Garam Masala; stir. Cook for 2 minutes, stirring frequently. Stir in the coconut milk and water; bring to a boil. Season with the salt and pepper.
Add the lentils; cook for 15 minutes or until tender, stirring occasionally. About 5 minutes before the lentils are done, place the cucumber slices in a single layer on a sheet of parchment paper. Sprinkle with salt and let stand until ready to use.
Serve the curry topped with the yogurt, cucumbers and parsley.
Tip: Serve with naan bread or hot cooked basmati rice.
