Spice up your Veggie Burger from Tofu!
Ingredients
¾ cup cashews, roasted
⅔ cup water
1 tsp. yellow mustard
1 Tbsp. tomato paste

½ tsp. Tofu Allrounder
7 oz. extra-firm tofu, cut into 4 equal pieces
3 Tbsp. olive oil, divided
1 fully ripe avocado
¼ cup flour
1 Tbsp. white sesame seeds
1 Tbsp. black sesame seeds
1 red onion, thinly sliced
1 tomato, sliced
4 hamburger buns
⅛ tsp. salt

Directions
For the Burger Sauce, spoon the nuts into a blender container. Add the water; let stand for 10 minutes. Add the mustard, tomato paste and Tofu Allrounder to the blender; blend until the nuts are finely chopped and the sauce is well blended. Set aside.
For the Burgers, place the tofu pieces in a bowl; sprinkle evenly with the Tofu Allrounder, then drizzle them with 1 Tbsp. of the oil. Set aside.
Cut the avocado lengthwise in half, then remove and discard the pit. Scoop out the avocado flesh into a medium bowl. Add 1 Tbsp. of the remaining oil; mash the avocado with a fork until desired consistency.
Combine the flour and sesame seeds in a pie plate or shallow dish. Heat the remaining oil in a large skillet over medium heat. Add the tofu pieces, one at a time, to the flour mixture, turning to evenly coat both sides of each piece with the flour mixture.
Add the tofu to the hot skillet; cook for 5 minutes or until the tofu pieces are heated through and lightly browned on both sides. Meanwhile, toast the cut sides of the buns, if desired.
Spread the bottom halves of the buns with the avocado mixture, then the Burger Sauce; top with the fried tofu, tomatoes and onions. Cover with the tops of the buns.
