    butternut squash (about 1.75 lbs)
  • 1
    onion
  • 2 cloves
    garlic
  • 2
    carrots
  • 2
    celery stalks
  • 1 tbsp
    butter
  • 1 can
    coconut milk (13.5 oz)
  • 2 cups
    vegetable stock
  • 1/2 cup
    heavy cream
  • salt, pepper

Directions

Peel, deseed, and cut the butternut squash into cubes. Steam or boil in lightly salted water for about 15 minutes until soft.

Peel and finely chop the onion and garlic. Wash and slice the carrots and celery.

Melt the butter in a large pan over medium heat. Add the onion, garlic, carrots, and celery, and sauté for 5–7 minutes, stirring occasionally, until the vegetables are soft.

Add the butternut squash to the pan with the sautéed vegetables. Pour in the vegetable stock and bring the soup to a boil. Reduce the heat and let it simmer for 10 minutes.

Use a hand blender to puree the soup until smooth and creamy. Stir in the coconut milk and season with salt and pepper to taste. Reheat the soup until hot, but do not boil.

Ladle the soup into bowls and garnish with a swirl of cream. Serve immediately.
