    bone-in chicken thighs
  • 6 cups
    chicken broth
  • 1
    onion
  • 2 cloves
    garlic
  • 3
    carrots
  • 2
    celery stalks
  • 1
    leek
  • 2
    potatoes
  • 1 tbsp
    butter
  • 1 tbsp
    soy sauce
  • 1 bunch
    parsley
  • 2
    bay leaves
  • salt, pepper to taste

Preheat a large pot with a little oil over a medium heat, then add the chicken thighs and the Chicken Allrounder seasoning blend. Brown the chicken briefly, then cover with the chicken broth. Add the bay leaves and bring to a boil. Reduce the heat and let the chicken simmer for about 20 minutes until fully cooked.

While the chicken cooks, peel and finely chop the onion and garlic. Wash and slice the carrots and celery. Remove the outer layer of the leek and slice thinly. Peel and dice the potatoes.

Once the chicken is cooked, remove it from the broth. Discard the bones and shred the meat with two forks. Strain the broth through a sieve to remove the bay leaves, and set it aside.

In a large pot, melt the butter over medium heat. Add the chopped onion, garlic, carrots, celery, leek, and potatoes. Sauté for 5–7 minutes until the vegetables soften.

Pour the strained chicken broth back into the pot. Bring it to a boil, then reduce the heat and let it simmer for 15–20 minutes until the vegetables are fully cooked.

Return the shredded chicken to the pot. Season with salt, pepper, and soy sauce. Simmer gently for an additional 5 minutes.

Ladle the soup into bowls and sprinkle with chopped parsley.
