    whole kernel corn, drained

    whole wheat tortillas (8-inch)
  • 1 cup
    canned crushed tomatoes
  • 1-¼ cup
    shredded Monteray Jack cheese
  • 1-¼ cups
    sour cream

Directions

Cut the sweet potato, bell peppers, zucchini, eggplant and avocado into ½-inch pieces. Cut the onion lengthwise in half, then cut both halves crosswise into thin slices. Cut the shishito peppers and garlic into thin slices.

Heat the ¼ cup oil in a large skillet over medium heat. Add the sweet potatoes, bell peppers, zucchini, eggplant, onions, shishito peppers and garlic; cook and stir until the vegetables are crisp-tender. Remove the skillet from the heat.

Add the corn, beans and the 3 Tbsp. Enchilada Seasoning to the vegetable mixture; mix well. Gently stir in the avocados, then season the vegetable mixture with salt to taste.

Preheat the oven to 400°F.

Grease a large shallow baking dish with 1 tsp. oil.

Spread 1 Tbsp. of the sour cream onto one side of each tortilla. Top the tortillas evenly with the vegetable mixture, then roll up and place, seam sides down, in the prepared baking dish.

Season the crushed tomatoes with 2 tsp. Enchilada Seasoning; spoon evenly over the enchiladas. Top with the remaining sour cream and cheese.

Bake for 10-15 minutes or until the enchiladas are heated through.
