Ingredients

  • For the Falafel:

  • 1 ½ tsp
    Vegetable Allrounder
"Spice up vegetables in an instant" $6.99 $93,200.00/kg Incl. 0% Tax, excl. shipping
  • 1 can
    chickpeas (15.5 oz)
  • 1
    onion, finely chopped
  • 4 cloves
    garlic, minced
  • ½ cup
    finely chopped fresh parsley
  • ½ tsp
    baking soda
  • vegetable oil (for frying)
  • 2 tsp
    salt
  • For the Mint & Yogurt Sauce:

  • 1 ½ cup
    plain nonfat yogurt
  • 1
    lemon, zest and juice
  • ½ cup
    finely chopped fresh mint

Directions

1
For the falafel, place the chickpeas in a large bowl. Add enough cold water to the bowl to completely cover the chickpeas. Leave to stand overnight.
2
Drain then rinse the chickpeas. Place the chickpeas in a blender container and blend until smooth. Spoon into a medium bowl.
3
Add the onions, garlic, parsley, and baking soda to the chickpeas, and mix well. Season with the salt and the Vegetable Allrounder.
4
Knead the chickpea mixture into a smooth dough, adding a small amount of water if necessary to hold the dough together.
5
Refrigerate for 30 minutes. Meanwhile, mix the yogurt, lemon zest, and lemon juice for the mint and yogurt sauce until well blended. Refrigerate until ready to use.
6
Add enough oil to a large saucepan or deep fryer to fill the pan to a depth of at least 2 inches. Heat the oil to 340°F. Meanwhile, shape the falafel dough into small balls.
7
Add the dough balls in small batches to the hot oil. Cook for 4 minutes or until golden brown. Remove the balls from the hot oil and drain on paper towels.
8
Serve the falafel with the mint & yogurt sauce.
Tip: For a lower-fat preparation, you can bake the falafel in your air fryer, spraying the falafel balls lightly with cooking spray before air-frying in batches.
