Ingredients
1 can (15.5 oz) chickpeas
1 onion, finely chopped
4 garlic cloves, minced
1/2 cup finely chopped fresh parsley
1/2 tsp. baking soda
Vegetable oil (for frying)
2 tsp. salt

1-½ tsp. Turkish Allrounder
1-½ cup plain nonfat yogurt
Zest and juice from 1 organic lemon
½ cup finely chopped fresh mint

Directions
For the Falafel, place the chickpeas in a large bowl. Add enough cold water to the bowl to completely cover the chickpeas. Let stand overnight.
Drain, then rinse the chickpeas. Place the chickpeas in a blender container; blend until smooth. Spoon into a medium bowl.
Add the onions, garlic, parsley and baking soda to the chickpeas; mix well. Season with the salt and the Turkish Allrounder.
Knead the chickpea mixture into a smooth dough, adding a small amount of water if necessary to hold the dough together.
Refrigerate for 30 minutes. Meanwhile, mix the yogurt, lemon zest and lemon juice for the Mint-Yogurt Sauce until well blended. Refrigerate until ready to use.
Add enough oil to a large saucepan or deep fryer to fill the pan to a depth of at least 2 inch. Heat the oil to 340°F. Meanwhile, shape falafel dough into small balls.
Add the dough balls, in small batches, to the hot oil. Cook for 4 minutes or until golden brown. Remove the balls from the hot oil; drain on paper towels.
Serve the falafel with the Mint & Yogurt Sauce.
Cooking Tip: For a low-fat preparation, you can instead bake the falafel in the air fryer, spraying the falafel balls lightly with cooking spray before placing them in the air fryer, in batches if necessary, to cook.
