Spice up your Quesadilla with Chicken!
Ingredients
1 Tbsp. olive oil
1 large boneless skinless chicken breast (7 oz.), cut into 1-inch cubes

1 Tbsp. Fajita Seasoning Blend
1 avocado
½ cup chopped cilantro
Juice from 1 lime
2 Tbsp. olive oil
1 red pepper, cut into ¼-inch-wide strips
1 red onion, slivered into ¼-inch-wide strips
1 can (8.75 oz.) corn, drained
4 wheat tortillas
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese

Directions
Heat the olive oil in a large nonstick skillet over high heat. Add the chicken; cook 2 min. or until done, stirring frequently. Remove skillet from heat. Add Fajita Seasoning Blend to the chicken; mix well. Spoon chicken in a medium bowl. Cover to keep warm.
For the Avocado Dip, scoop the avocado flesh into a food processor container. Add the cilantro and lime juice; process until well blended. With food processor running, gradually add the olive oil through feed tube at top of processor work bowl, processing well after each addition.
For the Quesadillas, combine vegetables. Place 1 tortilla in skillet. Top with half each of the vegetable mixture, cheeses and chicken. Cover with 1 of the remaining tortillas. Gently press top tortilla into filling to secure. Cook over medium heat 4 to 5 min. on each side or until cheese is melted and both sides of quesadilla are golden brown, turning once.
Transfer quesadilla to baking pan; cover. Place in baking pan in 225°F oven to keep warm while using remaining Quesadilla ingredients to prepare the second quesadilla.
Cut both quesadillas into small wedges. Serve with the Avocado Dip.
