Spice up your Chicken Stir-Fry with Vegetables!

Ingredients

  • For the Stir-Fry Sauce

  • 1,5 tbsp.
    JS Stir Fry Seasoning
  • 1 piece
    of fresh ginger root (2 inch), grated
  • 3
    cloves of garlic, minced
  • 2 cups
    chicken stock
  • 1/3 cup
    soy sauce
  • 2 tbsp
    cornstarch
  • 2 tbsp
    honey
  • 2 tsp
    sesame oil
  • For the Stir-Fry

  • 1 tsp
    JS Stir Fry Seasoning
  • 1-1,5 cups
    basmati rice uncooked
  • 1 lb
    boneless skinless chicken breasts
  • 6 cups
    small broccoli florets
  • 3
    carrots, peeled
  • 5 oz
    oyster mushrooms
  • 1
    green pepper, cut into thin strips
  • 1 bunch
    of green onions, sliced
  • 0,25 cup
    oil, divided

Directions

Place the Stir-Fry Sauce ingredients in a jar with a screw lid. Cover the jar tightly with the lid, then shake the jar until the sauce is well blended. Set aside.

Cook the rice as directed on the package.

Meanwhile, heat 2 Tbsp. of the oil in a wok or large skillet over medium-heat. Add the chicken strips; stir-fry for about 5 minutes or until the chicken is done. Season the chicken with 1 tsp. Stir Fry Seasoning, then spoon the chicken into a small bowl; cover the chicken to keep it warm.

Add the remaining oil to the wok along with the vegetables; stir-fry over medium heat for 7 minutes or until the vegetables are crisp-tender.

Add the prepared Stir-Fry Sauce; cook and stir until thickened.

Add the chicken to the vegetables in the wok; stir-fry 2 to 3 minutes or until the chicken is heated through.

Serve the stir-fry spooned over the hot cooked rice.
