Ingredients

  • 1.75 lbs
    waxy potatoes
  • 7 oz
    kale (fresh or frozen)
  • 1
    onion
  • 2 cloves
    garlic
  • 3.5 oz
    sun-dried tomatoes in oil (sliced)
  • 3.5 oz
    diced bacon (optional)
  • 2 tbsp
    olive oil
  • 2/3 cup
    heavy cream
  • 1/3 cup
    vegetable broth
  • 7 oz
    crumbled feta cheese
  • salt, pepper

Directions

Wash, peel, and slice the potatoes thinly.

Wash the fresh kale, remove the tough stems, and tear into bite-sized pieces. If using frozen kale, allow it to thaw.

Peel and finely chop the onion and garlic.

Heat olive oil in a pan and sauté the onion and garlic until soft and translucent. Add the kale and cook for about 5 minutes until wilted. Season with Potato Allrounder and salt and pepper to taste.

Drain and slice the sun-dried tomatoes. If adding bacon, fry it separately without oil until crispy.

In a small saucepan, heat the cream and vegetable broth, and briefly cook the potato slices in the liquid.

Lightly grease an oven-safe dish and layer the potato slices, alternating with the kale.

Pour the cream and broth mixture over the potatoes and kale, making sure everything is well coated.

Mix the crumbled feta with the sliced sun-dried tomatoes and sprinkle evenly on top.

Bake in a preheated oven at 350°F for about 35 minutes, or until the potatoes are tender and the cheese is golden brown.
