Ingredients
1/4 cup pine nuts
Juice from 1 orange
1/4 cup olive oil
2 Tbsp. light balsamic vinegar
10 cups loosely packed arugula
1 large mango, peeled, pitted and cubed
2 avocados, peeled, pitted and cubed
8 oz. mini mozzarella cheese balls

2 tsp. Avocado Topping, divided
Directions
Cook the pine nuts in a small skillet over medium heat until golden brown, stirring frequently. Spoon the nuts into a small bowl; set aside.
Whisk the orange juice, oil and vinegar in a medium bowl until well blended. Stir in 1 tsp. of the Avocado Topping.
Place the arugula in a large bowl. Add the orange juice mixture along with the mangos, avocados, cheese and pine nuts; mix lightly. Place on 4 salad plates.
Sprinkle with the remaining Avocado Topping.
