Creamy Chicken Mozzarella Pasta
Spice up your Creamy Chicken Mozzarella Pasta!
1 pkg. (16 oz.) whole wheat penne
5 oz. julienne-cut sun-dried tomatoes in oil, drained with 2 Tbsp. of the oil reserved
1 lb. boneless skinless chicken breasts, cut into thin strips
1 container (10 oz.) cherry tomatoes, cut in half
1 red onion, finely chopped
3 garlic cloves, minced
1 cup heavy whipping cream
Juice of 1 lemon
4 oz. mozzarella cheese, cut into small cubes
½ tsp. salt
1 Tbsp. Red Tomato Pesto
Cook the pasta as directed on the package until al dente. Drain and reserve 1/2 cup of the cooking water. Set aside.
Heat the reserved sun-dried tomato oil in a large skillet over high heat. Add the chicken; cook and stir for 2 minutes. Add the sun-dried tomatoes, onions and garlic; cook for 2 minutes and stir frequently.
Add the whipping cream and lemon juice. Bring to a boil, stirring frequently.
Add the pasta, the reserved cooking water, cherry tomatoes, salt and Red Tomato Pesto; mix well. Simmer over medium-low heat for 2 minutes, stirring occasionally. Remove from heat.
Stir in the mozzarella cheese.
